a tribute to my potato

had my yummy yummy yummy mashed potato at chillis for dinner. i am what you may call a potato freak. i just love 90% of the dishes made out of potato. the wonders of a humble potato that can be transformed into something exciting. hear no evil, see no evil and speak no evil -_- my potato fetish ain't fattening. done my research more or less 10 years ago. i'll just brush off the "fattening" remark with a smirk and forgive you for not being informative on it. for your info, a medium sized potato is only 100 calories, contains zero fat, cholesterol free and a good source of vitamins. frankly, my dear, whoever still thinks it's fattening, i don't give a damn and i just love my potatoes.

behold cheekypau's recipe. i do master some cooking skills but for my family's pleasure only. hehe. these are just a few of it :-

  • potato salad:
boil potato into salt water till tender. plunge into cold water. dice it into cubes. boil tomato into water less than 10 sec. plunge into cold water. finely dice the flesh without the seed. toss the potato cubes and tomato and lettuce leaves and mango cubes and olives and grated parmesan and black pepper and olive oil. yummy healthy potato salad!
  • potato croquettes:
boil potato into salt water till tender. drain till really dry then puree. mix with salt and black pepper and butter and egg yolk and diced ham and cheese and diced tomato. flour your hands and form into balls and cover and refrigerate. when ready to cook, coat with flour and egg and breadcrumbs and deep fry until golden brown. yummy french savoury!
  • roast potato:
boil quarter sized potato into salt water. once boil and still hot, lightly scratch with a fork. preheat roasting pan high heat and add oil (about 1cm) and when starts to smoke, add in hot potato. bake until golden brown and sprinkle with salt. yummy crispy hot potato!
  • mashed potato:
boil potato into salt water till tender. mash with a fork or masher and gradually mix butter/cream and hot milk. season with salt and black pepper. yummy creamy flavour!
  • potato and button mushroom chowder:
fry bacon cubes and potato cubes for 10min. add chicken stock and diced button mushroom and boil and simmer till potato tender. add cream and simmer 5 min. season with salt and black pepper.
  • french fries:
go to mcd! it's my favourite and the best!! hehe.
note to cheekypau: how versatile a delightful understated vegetable can be. hail ye potato!
